This is my very favourite easy summer salad recipe when having friends over. It’s always requested. The sparky loves it and I can load up the apprentice with veggies :)
about 2 cups lightly steamed cut broccoli flowerets (small) – still crunchy
4 rashers cooked bacon, crumbled
fresh chives – about 6, chopped,
1/4 cup sour cream mixed with 1/4 cup plain yoghurt
1 tablespoon lemon juice
2 tablespoons toasted pine nuts
little bit fresh basil
1 teaspoon sugar (yes, this is needed)
Mix everything together and pour over broccoli, toss well.
The dressing also makes a FAB veggie dip.
