(For Amy over at sensible spice) This is our favourite, simple pasta recipe. And very light. Quick, light and delicious. And very Amy :)
200 g green olives, pitted
2 cups fresh basil leaves
1/3 cup lemon zest
1/3 cup lemon juice
4 tb olive oil
1 bulb garlic, skinned
200g skinny spaghetti
1/2 cup very finely grated parmesan
Put the olives, basil, lemon zest, lemon juice, oil, garlic, salt and pepper into a food processor or bamix and process in short bursts until roughly chopped. You want small chunks. Set aside.
Cook the pasta until al dente.
Once pasta is cooked and drained, add the olive and garlic mixture and parmesan and stir to combine.
Serve topped with some chopped basil leaves and chopped oregano
This is SERIOUSLY garlicky and lemony, so beware :)
